Ingredients of Mascarpone Mousse (Diabetic friendly):

  • 1 cup light sugar or stevia
  • 6 egg whites
  • 16 oz Mascarpone chese
  • 1/4 tsp vanilla

Method for "Mascarpone Mousse (Diabetic friendly)":

  1. Beat egg whites in a large mixing bowl until eggs are creamy and thick (meringue-like).
  2. Add sugar to egg whites and continue to whisk.
  3. Once eggs and sugar are thicker, add the cheese and vanilla. Mix well.
  4. Serve mousse with fruits of your choice.
  5. Tip: when adding cheese, you can add other fruit flavors such as tamarind juice.
