Ingredients of Rhubarb strawberry custard pie:

  • 3 cups rhubarb sliced
  • 1 c strawberries sliced
  • 1/4 c all-purpose flour
  • 1 c sugar
  • 1/4 t salt
  • 3 eggs beaten until frothy
  • 1/2 t vanilla
  • Crust for 2 layer pie:
  • 2 c flour, 1 t salt, 3/4 c Crisco, 5-8 T cold water
  • Refrigerate for 1/2 hr. Roll out

Method for "Rhubarb strawberry custard pie":

  1. In bowl combine sugar, flour & salt. Add rhubarb & strawberries, stir to coat. Spread in tin. Beat eggs & vanilla, pour over filling. Top with pastry
  2. Bake at 425° - 15 min, 350° - 30 min until knife is clear 1 in from center.
  3. Let cool on rack.
