  • 2 eggs
  • Half an avocado
  • 1 English muffin
  • 2 slices tomato, thin
  • Salt free seasoning
  • 1 pinch basil

Method for "Avocado and egg open faced English muffin":

  1. Boil eggs. For this recipe I like them medium boiled. Place eggs in boiling water for about 6-7 minutes. Remove and immediately put in ice bath.
  2. While boiling eggs, toast English muffin.
  3. Slice avocado into medium pieces.
  4. Slice 2 slices of tomato, thin.
  5. When eggs cool, peel and slice.
  6. Place tomato and avocado on English muffin. Top with egg slices.
  7. Season with salt free seasoning and basil. Enjoy!
