Ingredients of Green Chile and Spinach Chicken and Rice:

  • 3 tablespoons chopped onions
  • 1 tablespoon flour (I used whole wheat flour)
  • 2-3 cups unsweetened plant milk or cow's milk
  • 1 small can green chiles
  • 1 cup frozen or 2 cups fresh spinach

  • to taste Salt
  • to taste pepper

Method for "Green Chile and Spinach Chicken and Rice":

  1. Saute onions for a few minutes with hot oil and a small pinch of salt
  2. Once onions are a bit softened, add flour, and stir often once flour is very lightly browned, just changing slightly in color to create a blonde roux
  3. Add green chiles and spinach
  4. Slowky whisk in 2 cups of milk of choice.
  5. Let come to a boil, and then lower heat to simmer
  6. Stirring often, continue to let thicken to desired consistency. Whisk in more milk if too thick.
  7. Add rice (or corn, pasta or quinoa, for example) and shredded chicken (or tempeh, tofu or beans) and heat through
